Fraiser Sour

An oldie … But a goodie…. Trust us…. Just try it.

Ingredients

  • 50ml Fraiser
  • Lemons (enough to make around 30ml lemon juice and one for garnish)
  • 1 strawberry (for garnish)
  • 2 spoons Caster sugar (or personal preference)
  • 3-4 dots of Angostura bitters
  • Pasteurised egg white (you can use fresh egg white if you like but pasteurised is better and safer)
  • Cubed ice

Equipment

  • Cocktail shaker
  • Hawthorn strainer
  • Fine strainer (optional)
  • Citrus press or citrus juicer
  • Old fashioned glass (around 10-12oz)

Method

1. Juice your lemons. Remember to leave one for garnish. Fresh lemon juice is always best DO NOT use concentrated lemon juice.

2. Add lemon juice and Caster sugar to shaker. Stir to dissolve sugar.

3. Add egg white (no more than 30ml otherwise you’ll end up with a drink that feels like cotton wool).

4. Add Fraiser.

5. Dry shake (shake without ice). A few seconds is fine, you do this to emulsify the egg proteins (if you’re interested…if not, then: it makes your drink fluffier.)

6. Add ice to shaker and shake hard. If the ice is dense enough then the tin should frost but 8 seconds is a good rule of thumb.

7. Fine strain into your choice of glass containing fresh cubed ice.

8. Dot bitters over the drink and in the fluffy foam you’ve just created.

9. Garnish with strawberry and lemon wheel.

10. Be proud of yourself: this is one delicious drink!
